Reunion Cheesy Potatoes

Since this weekend is Mothers Day weekend, I decided to share my great aunt's cheesy potato recipe that she would make for our family reunions. It's easy to make in larger quantities and feed a crowd.  1 package 22 oz frozen hash browns, defrosted  1 cup diced onion 1 (10.5 oz) can cream of chicken soup undiluted  16 oz sour cream 1/4 cup butter, melted 8 oz grated sharp cheddar cheese  Non stick vegetable spray  Preheat oven 375 degrees  Spray 10x5 pan Mix hash browns, soup, sour cream, onion, butter and cheese and spread in pan. Top with corn flakes or chips Place in oven and bake for 1 hour

Make ahead Breakfast Sandwiches

I will be the first to tell you that I am not a meal prepper. The closest I get is freezing the 2 leftover pancakes for my child to eat midweek or splitting leftovers into a few lunchbox friendly containers for the next day. But when you want a good breakfast when working 40+ hrs a week and having a family and animals to care for in the morning beforehand, sometimes you gotta do something to make your mornings just a little easier.   Before we got our flock of chickens, I remember going to the store for those frozen breakfast sandwiches for busy mornings, and I couldn't believe how much they were charging when I could make them so much cheaper. (And my husband likes to snack on them, so 9/10 they were gone before my busy mornings really came) so I started making my own. I get the skinny bagels or skinny buns, whip up about a dozen eggs and milk to make scrambled eggs and put them into a few donut baking sheets (mostly because they are about the right size for sandwiches. Shrimp Stir Fry

What to make with these eggs? You can only eat so many fried, scrambled, omelets and hard boiled eggs. So what to do with the rest? That's why I'm starting this weekly recipe series.  Enough chatter, On to the recipe  Shrimp Stir fry (for 2) 2 Chopped up carrots (or a good handful of babys carrots) 1 Chopped bell pepper  1/2 onion chopped 16 oz bag of shrimp (peeled, deveined and taillesss makes it easy) 1 cup frozen peas 1 cup broccoli, frozen 2 eggs Warm up some oil in a skillet, add carrot, bell pepper, onion, and cover. Stir occasionally. Once onion is almost translucent,  mix in eggs, peas and shrimp. If you want to add any sauce in, like teriyaki or soy sauce,  add some in now. Cook until the egg is cooked and the shrimp is cooked through (white)  Serve with rice.  I love to mix it up with this recipe. Sometimes I use chicken, sometimes pork or steak. Sometimes I add different veggies based on what's in season and what I have on hand. Play around...
