Shrimp Stir Fry

What to make with these eggs? You can only eat so many fried, scrambled, omelets and hard boiled eggs. So what to do with the rest? That's why I'm starting this weekly recipe series. 

Enough chatter, On to the recipe 

Shrimp Stir fry (for 2)

2 Chopped up carrots (or a good handful of babys carrots)
1 Chopped bell pepper 
1/2 onion chopped
16 oz bag of shrimp (peeled, deveined and taillesss makes it easy)
1 cup frozen peas
1 cup broccoli, frozen
2 eggs

Warm up some oil in a skillet, add carrot, bell pepper, onion, and cover. Stir occasionally. Once onion is almost translucent,  mix in eggs, peas and shrimp. If you want to add any sauce in, like teriyaki or soy sauce,  add some in now. Cook until the egg is cooked and the shrimp is cooked through (white) 

Serve with rice. 

I love to mix it up with this recipe. Sometimes I use chicken, sometimes pork or steak. Sometimes I add different veggies based on what's in season and what I have on hand. Play around with it and find what you and your family like. I used to make this without egg, but when I made this yesterday with egg, I enjoyed it so much, I'll probably always include egg now. 

I'm bad at writing down my recipes. I like to add a little of this and a little of that until it looks good.  I love trying new recipes and making them my own. So this is close to how I made it last night. When I graduate to my own website, I'll get these in a printable format, but for now, you are gonna have to copy & paste.
